Cheesy Cauliflower Recipe

When it comes to cooking (or eating out) you never really consider having cauliflower as part of your meal. Come to think of it, I rarely see restaurants include this Mediterranean vegetable on their menu. Anyway, spice up your next meal with this cheesy and flavorful recipe that’s easy to cook.

Ingredients (Serves 4)

– 1 Head Cauliflower

– 2 Tbsp Olive Oil

– 1/3 Cup + 2 Tbsp Freshly Grated Parmesan (any variation will do)

– 1/2 Tbsp Minced Garlic

– 1/4 Bunch of Fresh Parsley

– Pepper & Sea Salt to taste


Preheat your oven to 400 degrees. Cut up the cauliflower by removing the outer leaves and slicing the head in half and then into quarters. Cut the core off of each quarter and then break into bite sized florets. Next, rinse the florets well under running water. Don’t use plastic dinnerware sets for this step since they cannot withstand the heat inside the oven.


Combine olive oil, minced garlic, and 1/3 cup of grated Parmesan in a large bowl. Mix to combine. Add the cauliflower florets and stir until they are coated with the garlic cheese mixture.


Cover a baking sheet with tin foil and spread the cauliflower florets in a single layer. Scrape the remainder of the garlic cheese mixture from the bowl over the florets. Sprinkle with salt and pepper. Bake in the 400 degree oven for 45 minutes. Before the final 15 minutes of cooking, sprinkle the last 2 Tbsp of Parmesan over top and turn the oven down to 350 degrees. If the tips of the florets begin to turn black, give a quick stir to prevent burning.


While the cauliflower is roasting in the oven, rinse the parsley, shake dry and chop into tiny pieces. When the cauliflower is cooked, sprinkle the parsley over the cauliflower. Lastly, serve and enjoy!
